The wine is aged in tank until the spring and then bottled without filtration and with a small amount of sulfur

2023 Saisons Bourgogne Aligote, Burgundy, France Friuli Heart of StoneVine Age: Average of 40 years (as of 2023) Terroir: Ig, Maconnais, at the base of the slope, silt soil. Viticulture: Purchased grapes, organic. Vinification: Pressed with a pneumatic press, ambient yeast fermentation, aged for 12 months on the lees in used barrels, racked and aged for an additional 6 months in stainless steel, no fining or filtration, minimal SO2 added before bottling.
