Domaine Saint-Cyr VdF Melo 2023 2025 L'Assemblage Part 2 From 50- to 55-year-old CabernetThree grapes, one tank, layered in like a mille feuille. Melo is Raphael Saint Cyr's co ferment of Gamay, Pinot Noir and Chardonnay from forty year old vines, stacked in alternating layers in concrete and left to macerate cold and carbonic for a couple of weeks. The white grapes fermenting alongside the red lift the whole thing, and the result is a light, translucent red built entirely for drinking rather than contemplating. It's farmed organically,
