Fosse Seche was discovered by the Benedictine monks around the 10th century and was already producing wine in the early 1200's
Partially de-stemmed (50%) and fermented with natural yeasts in large barrels
and you find limestone rocks throughout the vineyard
This was followed by four months in stainless steel on fine lees
2024 Emmanuel Rouget Bourgogne Passetoutgrains, Burgundy, France Curtet VITICULTURE: Certified (organic)A blend of Pinot Noir and Gamay, co fermented to highlight vibrant red fruit character. Fermented with native yeasts and aged in neutral vessels. Wine arrives late April, 2026.
